Instructions
1. Reheat oven to 350C (175°C). Line a baking tray with parchment paper.
2. Combine all the dry ingredients (green pea flour. plain flour, icing sugar, salt, baking powder) in a mixing bowl. Mix well with a hand whisk.
3. Gradually mix in the oil (2 or 3 tbsps at a time) and knead with your hands until a soft dough is formed. The dough should be just moist and comes together without falling apart. Add a little more oil if necessary if it is too dry.
4. Pinch a bit of dough with your fingers (about a teaspoon) and mould with your hands to form little balls.
5. Place them on the baking tray and press a green pea into the center of the ball. Repeat with the rest of the dough and brush with egg wash if using.
6. Bake in the oven at 180 C/350 F for 15-20mins. Remove and let them cool on the tray.
7. Store in airtight containers. They will keep for up to 4 weeks at room temperature.
