Here’s a recipe for Honeycomb Cookies, perfect for Chinese New Year:

Ingredients:

  • 3 large eggs (Grade A) 鸡蛋
  • 50g glutinous rice flour 糯米粉
  • 50g rice flour 粘米粉
  • 50g corn flour 玉米淀粉
  • 125g coconut cream 椰浆
  • 65g caster sugar 细砂糖
  • 1/4 tsp salt 盐

Instructions:

  1. Preheat the Oven: Preheat your oven to 350°F (180°C). Line a baking sheet with parchment paper.

  2. Prepare Dry Ingredients: In a bowl, sift together the glutinous rice flour, rice flour, and corn flour. Set aside.

  3. Mix Wet Ingredients: In another bowl, whisk the eggs until well beaten. Add coconut cream, caster sugar, and salt. Mix until the sugar is dissolved.

  4. Combine Dry and Wet Ingredients: Gradually add the sifted dry ingredients to the wet ingredients, stirring continuously to avoid lumps. Mix until you have a smooth batter.

  5. Rest the Batter: Allow the batter to rest for about 15-20 minutes. This helps the flours absorb the liquid, resulting in a smoother texture.

  6. Fill the Molds: Grease and flour your honeycomb cookie molds. Pour the batter into the molds, filling each about 3/4 full.

  7. Bake: Bake in the preheated oven for about 15-20 minutes or until the edges of the cookies are golden brown. Keep an eye on them to prevent over-baking.

  8. Cool: Allow the honeycomb cookies to cool in the molds for a few minutes before transferring them to a wire rack to cool completely.
